Taverna Winery & Restaurant is pleased to announce the appointment of Jimmy Mitchell as Executive Chef.
Jimmy brings 25 years of cuisine and artistic experience to Taverna, having studied and worked
around the world throughout his culinary career. Jimmy will join Taverna officially on February 24, 2008.
A Native Houstonian, Jimmy brings a devotion to organically grown foods and a strong sense of
creativity honed in California’s wine country. Jimmy is a graduate of the Culinary Institute of
America in New York, as well as Certified Master Gardener from Texas A & M University. He also
studied at the Valley Oaks Food and Wine Center at Fetzer Vineyards in California, where he honed
his creative skills, working with over 1,000 varieties of fruits, vegetables, herbs and flowers
grown at this bio-dynamic organic garden. Here he was also able to enhance his understanding
of the collaboration between wine and food both in preparation as well as in pairings.
Additionally, his foreign studies included time in both Australia and New Zealand.
Jimmy comes to Taverna directly from Gaido’s Seafood House in Galveston, Texas, the nearly
100 year old cornerstone of dining in that city. Prior to that, he was Executive Chef at
the prestigious Riversong Lodge in Anchorage, Alaska, which is ranked as One of the Top 25
Lodges in America. Jimmy’s other experiences include Executive Chef positions at Messina
Hof Winery and Resort, in Bryan, Texas as well as several years at Rainbow Lodge, one of
the true Landmark Restaurant properties in Houston.
Over the years, Jimmy has earned a variety of awards for his preparations, and has been
named one of the “Great Chefs in Houston”. Please join us in welcoming this truly outstanding
Chef to the Conroe area as we at Taverna look forward to enhancing the quality of our products
